烹调方法 Cooking Instruction:
1. 把1公斤的鲜肉(建议用花肉去皮,滴干水)用“詹大叔”叉烧酱腌制至少3至4小时或放入冰箱腌制隔夜。Marinate 1kg fresh meat (pork belly recommended-skin removed & drip dried) with Uncle James Char Siew Sauce for at least 3 - 4 hours or overnight in the chiller.
2. 把450毫升的水倒入锅里煮沸。把腌肉和酱汁倒入锅里,盖上锅盖焖煮20分钟。随后,把肉翻转再盖上继续焖煮20分钟。Bring 450ml water to boil in a wok/cooking pot and simmer marinated meat & sauce in the boiling water for 20 minutes with lid on. Turn meat over and continue simmering for 20 minutes with lid on.
3. 打开锅盖,调至中火并搅拌约5分钟或煮至酱汁黏稠。Remove lid, switch to medium heat and stir for approximately 5 minutes or until sauce is reduced to a sticky consistency.
4. 以慢火煎约5分钟,至微焦即可享用,切勿烧焦。Lightly char meat under low flame for another 5 minutes. Ready to serve.
